BELLINI
Bellini was first created in the '30s at Harry's Bar
in Venice, this sweet, bubbly cocktail was named in
honor of 15th century renaissance artist Giovanni
Bellini. Oddly enough, Bellini himself was a despondent
Bud man and probably would have substituted peach
for prunes. Peach puree, Peach liqueur finished with
Prosseco and layered to perfection.
THE CLASSIC CHAMPAGNE COCKTAIL
This legendary Champagne Cocktail, most frequestntly
served in a champage flute, made with Angostura bitters-saturated
sugar cube, breezed with Courvoisier Exclusif and
sparked with Champagne. Light and brimming with flavour,
a superb apertif.
FRENCH 75
The original cocktail (or fear-preventative) was created
furing World War 1 and named after the French 75mm
cannon. In the 1920's, the recipie was mofified in
to the 'French 75' - something competely different,
and without absinthe, at Harry's American Bar in Paris.
Made with Beefeater Gin, freshly squeezed lemon juice,
refined sugar syrup and Champagne.
VANILLA TRAFFIC JAM
Originally created at 'The Cuban' in Camden Town around
summer 2004 then later refined at 'The Cuban' Moorgate.
A unique combination of Heering Cherry Liqueur, cherry
jam, vanilla sugar syrup, guanabana juice topped with
prosseco.

The invention of
rum probably dates from not long after the foundation
of the sugar plantations in the West Indies in
the early 16th century. Juices from sugar cane
were pressed and either fermented straight or
else boiled down. Coloured Rums are caskaged some
times for decades before they are bottled providing
a vintage product for the connoisseur.
CUBA LIBRE
Cuba Libre originated after the Spanish-American
War, when a group of American soldiers first
mixed Coca-Cola, Rum and a wedge of lime to
toast to the freedom of Cuba. Havana Club Anejo
Especial, fresh lime and Coke.
EL PRESIDENTE
The El Presidente is a cocktail of pre-revolutionary
Cuban origin. Although popular throughout the
Island of Cuba, this recipie was developed at
the La Floridita bar by Constantino Ribailagua.
Havana Club Anejo Especial, Sweet and Dry Vermouth,
Triple Sec and Maraschino liqueur.
DAIQUIRI
This Cuban classic is named after a town in
Orient province. The recipie was created by
an American mining engineer named Jennings Cox
and a Cuban engineer named Pagliuchi in the
late nineteenth Century. Havana Club Especial,
fresh lime juice, a dash of sugar syrup and
Triple Sec.
PAPA DOUBLE
Created for Ernest Hemingway by Constantino
Ribailagua at the La Floridita bar in Havana,
Havana Club Anejo Especial, Maraschino liquer,
a touch of grapefruit juice, sugar syrup and
fresh lime juice.
THE CANCHANCHARA
One of the most famous and sexiest drinks in
Cuba. With a provocative mixture of honey, fresh
lime and Havana Club Especial, all buried under
crushed ice.
MOJITO
If your idea of a refreshnig drink involves
a frosty mug of beer or a frozen Margarita it's
time for you to broaden your horizons. Mojitos
are traditionally made with Havana Club Anejo
Especial, fresh lime, mint, brown sugar and
soda water.
PASSION FRUIT MOJITO
Just when you thought that a classic this good
couldn't get any better, think again! With all
the original ingredients but with passion fruit
syrup and fresh passion fruit.
PURITY CLUB
A fascinating blend of Havana Club Especial,
ginger and lemongrass syrup, maple syrup, egg
yol, pomegranate, molasses, pomegranate juice,
fresh lemon juice and milk, shaken together
with fresh mint leaves.
ORO DRAGON
This award winning drink was created by our
own senior mixologist and swept away all competition
at the world famous annua Bacardi Cocktail Competition
(2005). An amazing blend: Bacardi Oro, Mandarin
Napoleon, apple juice, ginger syrup, fresh lemon
juice, egg white, cinnamon sticks, and ginger.
THE BURNING RED
A killer blend of Sailor Jerry Spiced Rum, Havana
Club Anejo Especial, fresh raspberries, mild
red chillies, Chambord, fresh lemon juice and
vanilla liqueur.
VERY CUBAN BERRY
This spectacular mix is a Hell of a way to start
a night. With a blend of Havana Club 7 y.o,
a touch of red wine, elderflower syrup, fresh
blackberries, raspberries, fresh lime juice
and a hurricane dust of cinnmon - served short
and deadily.
DARK ANGEL
The 2006 entry for the Bacardi Cocktail Competition.
The mixologists from the Cuban are sure to be
leading contenders again this year. A magic
blend of Grandfater Bacardi 8 years old, Creme
de Mure, maple syrup, fresh blackberries, fresh
lemon juice and pomegranate juice.

SAZERAC
The SAZERAC is reputed to be the first ever cocktail.
Antoine Amedee Peychaud, born in France and the creator
of Peychaud bitters was it's inventor. Cuban variation,
Courvoisier V.S Cognac, Woodford Reserve Bourbon,
brown sugar cube Peychaud Bitters and a dash of Absynthe.
OLD FASHIONED
This amazing and smooth delicate mix was first created
at the Pendennis Club Louisville, Kentucky. Woodford
Reserve stirred patiently with brown sgars soaked
on Angostura Bitters, slowly built in stages and treated
with orange zest.
MANHATTAN
Winston Churchill's Mother, who was American, threw
a party at the Manhattan Club for Govenor Tilden of
New York. She asked the bartender to come up with
a drink for a special occasion and that's how the
Manhattan was created. Canadian Club, Whiskey 6 y.o,
after that is how you like it: Sweet, Dry or Perfect.
CAIPIRINIA
Nothing is known about the creator of Caipirina (The
little Peasant Girl) this Brazil's most famous drink.
Traditionally prepared with lime, brown sugar cubes,
crushed ice and a large shot of finest Cachacha Pitu.
BETWEEN THE SHEETS
Created in the 1930's, this cocktail is the perfect
prelude to seduction. Courvoiser V.S Cognac, Havana
Club, Anejo Especial, Triple Sec and fresh lemon juice.
MARGARITA
A long lover or a seductive mistress? This blend of
Gold Tequila, Cointreau and freshly squeezed lime
juice. This will drive you mad and keep you coming
back for more.
COSMOPOLITAN
The COSMOPOLITAN is rumoured to have been created
by a community in Provincetown, Massachusetts. Made
from a potent mix of cranberry juice, Absolute Citron,
Cointreau and lime juice served in a Martini Glass
with an orange zest, it's a trendy staple.
MAI TAI
Through the origin of MAI TAI is hotly contested,
nobody has given as much credit as Trader Vic, a traveler,
epicurean, and restaurateur. According to accounts,
when two Tahitian friends requested a special drink
at his restaurant. Trader Vic mixed rum, lime, Orange
Curacao, orgeat and sugar syrup. The friends liked
it so much that they declared "MAI TAI"
or, "ROE'AE" meaning out of this world.
DARK AND STORMY
One of the James Coburn's favorites with a devastating
blend of Captain Morgan dark rum, freshly squeezed
lime juice and ginger beer.
BRAMBLE
Simple yet timeless clarity and texture: Bombay Din,
Creme de Mure, fresh lemon juice, sugar syrup, ffresh
blackberries served over crushed ice.
CAIPIRINHA DO BRAZIL
Nothing is known about the creator of CAIPIRINIA (The
Little Peasant Girl) this Brazil's most famour drink.
Traditionally prepped with lime, brown sugar cubes,
crushed ice and a large shot of finest Cachacha Pitu.
MOSCOW MULE
This mule is the one that kicked off the vodka craze
in the United States back in the '50s. A strange creature
with a mild bite, Stolichnaya Vodka, fresh lime juice,
dash of Angostura bitters, topped with ginger beer.
NEGRONI
Created in Florence, Italy in the 1920's at the Casoni
bar, when a customer asked the bartender to add Gin
to his Americano. Tanqueray Gin, sweet vermouth and
Campari finished with an orange slice.
BRANDY ALEXANDRA
Another classic that just won't die! With a large
slug of Martell Brandy, Creme de Cacao Brown, milk
and single creme, garnished with chocolate dust.
MINT JULEP
This refreshing concoction the great-grandfather of
all infusions, is perhaps the most misunderstood of
all cocktails. Although the Julep's origins are lost
in antebellum antiquity it almost certainly originated
south of the Mason-Dixon Line. Mixed with finest aged
mellow Rye the distillation of which is an almost
forgotten art, the Julep is a natural combination

SHAHAD MARTINI
Created by Master Mixologist Douglas Ankrah around
2001. Dates infused with Appleton V/X Rum, honey liqueur,
freshly squeezed lemon juice and muddled lemongrass.
FRENCH MARTINI
A delicate mix of Stolichnaya Vodka, Chambord (black
raspberry liqueur) and pineapple juice. Step back
and appreciate the perfect froth and mulberry colour.

Tasty as Heaven, Smokey as Hell. An amazing blend
of courvoisier V.S Laphroaig 10 years old, caramel
syrup and Grand Marnier finished with flamed orange
zest and cocoa rim.
FEIJOA MARTINI
One of the best flavoured vodkas of our generation.

WHISKEY SOUR
As we call it 'Balance on The Edge'. A crispy blend
of Maker's Mark Bourbon, freshly squeezed lemon juice,
house made sugar syrup, Angostura Bitters and frothed
with pasteuried egg white.
PISCO SOUR
Pisco sour is a cocktail from Peru, largely attributed
to Chile but recently recognised internationally as
a drink of Peruvian origin. It contains Pisco, a regional
brandy made of Muscat grapes, freshly squeezed lemon
juice, Angostura Bitters, white sugar syrup finished
with egg white.
SOURED HAVANA
Challenging mix of Havana Club Especial, freshly squeezed
lemon juice. Peyshaud's Bitters, white sugar syrup,
peach bitters shaken with egg white.
MINT JULEP
No kentucky Derby woudl be complete without the venerable
Mint Julep on the first Saturday in May. Mint Julep
become Churchill's signature drink in 1938 when they
started to serve the drink in souvenir glasses for
75 cents each. Today, The Kentucky Derby serves more
than 80,000 juleps over the two-day event. Maker's
Mark Burbon, fresh mint leaves, sugar syrup and soda
water.
GRAPEFRUIT JULEP
A graceful and tender Julep: Stolichnaya Vodka shaken
with fresh mint, freshly squeezed lime, pomegranate
juice, fresh grapefruit and a drizzle of honey. Served
over crushed ice.
NAPOLEON VERT
Our cool green version of Mint Julep with Courvoisier
V.S, fresh Mint Kiwi, freshly squeezed lime juice,
Canadian maple syrup, Kiwi liquer. All cover with

RAMOS FIZZ
Created in 1888 by Henry C. Ramos when he opened his
Imperial Cabinet Bar in New Orleans. A simple formula
of Plymouth Gin, freshly squeezed lemon juice, organe
bitters, sugar syrup, egg white and soda water.
PLANET'S FIZZ
A generous slug of Havana Club Especial, fresh lime,
lemon and orange juice, a float of Campari, egg white
and cinnamon dust. Served in a long glass.
BRAZILIAN FIZZ
A fantastic mix of Cacacha infused with Indonesian
vanilla pods, pasteurised egg white, sugar syrup,
freshly squeezed lemon juice and Heering Cherry Liqueur,
finished with a cinnamon stick and topped with lemonade.
